Ying Dishes In North and South China
There have been many discussions about the differences in diet between the North and South in China. For example, the northern Chinese may wonder why southerners must have stir-fried vegetables as the last dish for a meal, while the southerners may be surprised to know that people from north are used to hoarding cabbages before winter.
Recently, different understandings of ying dishes caused another round discussion on the internet.
In northern China, ying dishes refer to those which are special and delicious enough to show your warmth when you treat guests. Dishes with plenty of meat and fish are often considered as ying dishes which are usually served in basins rather than plates. Some said that ying dishes are quite common in the North, which are usually made of completely beef, lamb and pork and other kinds of meat. People cook these kinds of meat together with sauce in a large pot.
For most southern Chinese, however, ying dishes are quite unfamiliar. Seven out of eight styles of Chinese cuisine (菜系)come from southern parts of China, which have different kinds of cooking methods. The dishes are put on the fine plates . There are a large number of ying dishes in South China with perfect colors, smells and tastes.
In Guangdong province for example, soup is an important part of Guangdong cuisine. It stress exquisite (精致的) preparations and provides enjoyment with well-chosen ingredients and beautiful presentation. Soup is usually stewed (燉)for several hours with vegetables or seafood rather than meat, and is often considered as the ying dish . It is said that soup should always be served first on the table with great expectations and people will comment after trying. A restaurant which is unable to provide satisfying soup is often considered a failure.
